It was December 31, 2010 and I was to bake a pineapple upsidedown cake.
Mom had always been the one to make it but it looked pretty simple so I wanted to give it a shot.
Materials
Mixing Bowl
Spatula
Baking tray
Cutting board or flat plate
a Whisk
Nonstick spray
Pineapple Upsidedown Cake Mix (whichever one you prefer)
3 large Eggs
1 can of sliced pineapple
Cherries
1/3 cup oil
1 & 1/3 cup of water (or instead you can use the pineapple juice left over from the can to add more pineapple-y flavor to the entire cake!)
2/3 cup of flour (this helps the cake be less poreous)
Now I'm going to keep the steps short and sweet because that's easier :D And the process is pretty simple!
Preheat oven to 350 deg F.
Mix all of the ingredients above in the mixing bowl until thoroughly mixed (as in no lumps visible).
Apply the nonstick spray onto the baking tray all around
Evenly place the pineapple slices across the tray
Put 1 cherry in the center of each of the pineapple slices
Pour the mix evenly on top of the pineapple and cherries throughout the tray (use a spatula to pour the leftover mix from the bowl and to evenly spread the mix across the baking tray).
Once the oven is preheated to 350 deg F, slip the tray in for 30-35 mins (remember that the time varies with the size and type of tray!)
Times up! You have to make sure that the cake is baked all the way through (always). So you can use a toothpick to see if it's still uncooked in the middle and usually you want the top of the cake to be bronzed.
If it's ready to take out then set it somewhere where it could cool off (about an hour at best).
Later, feel the bottom of the baking tray (without getting burned ;) ) to make sure it's cooled.
If so, place a cutting board or a flat tray on top of the tray/cake and quickly flip it upsidedown (this might take practice ha ha... I still have to get better at this).
Slowly lift the tray up while you're peeking to make sure the cake is nicely slipping out from the tray onto the cutting board/flat tray/plate. (If the cake desists to slip out, you have to let the tray cool more... about 30 mins).
Once the cake slips out of the tray...
Voila!! It's so beautiful!! He he ;) But I would have liked it to be more bronzed on the bottom (now the top).
But the family and I had some and it was so delish!
Oh and the Folgers you see in the pic with the creamer is a suggested accompaniment ;) Yum
Or maybe some Starbucks'll do ;)
